How would you describe your menu philosophy and how has it evolved over time?
Our menu philosophy is about giving people the best version of what they came to a great pub for: generous food, seasonal flavours, and consistency. For The Colonist, that means respecting ‘pub classics’ people know and love, and lifting them with better produce, cleaner execution and seasonal changes.
How do you balance traditional favourites with more contemporary plates?
We think about it less as a balance and more as designing for the whole table, because rarely does everyone want the same thing. Where one person has been thinking about a parmi, another wants something light, or to graze across share plates. Our job is to make sure nobody feels like an afterthought.
What steps do you take to ensure there’s something to tempt every palate – from comfort food lovers to more discerning diners?
It’s something we’re quite deliberate about at every stage of the menu. Our head chef maps the menu against different guest profiles – not just dietary requirements but dining occasions and moods. The pub classics anchor it for guests who want comfort and value, and then we deliberately build in lighter plates, share options and dishes with a bit more finesse. Ultimately, if every person at the table finds something they’re genuinely excited to order, we’ve done our job.
Which classics remain non- negotiables on your menu– and why do you think they endure?
A good quality schnitzel and parmi are always non-negotiable, as well as a strong burger, a proper steak, and a comforting dessert like our sticky date pudding. These dishes deliver exactly what people want from a pub: flavour, value, familiarity, and satisfaction. These dishes are the foundation of trust between a pub and its community, and we take that seriously.

Have you noticed shifts in what your community wants from a pub menu in recent years?
Guests are more conscious of quality and sourcing, and there’s a growing interest in lighter dishes and dietary-friendly options. At the same time, the want for pub classics such as a chicken parmi is as strong as ever. People want value, quality, and an experience that feels welcoming and consistent.
If someone was visiting for the first time, what would you recommend they order – and what makes it special?
We’d recommend starting with a premium steak, one of our Thai curries or even a handful of our delicious small plates! Pair it with a South Australian wine, cold tap beer, or a speciality cocktail, and you’ll get the full Kent Town Hotel experience: quality food and exceptional hospitality.

Our philosophy centres on approachability, quality, and versatility. We aim to create food that feels familiar and satisfying whilst still offering thoughtful execution and seasonal relevance. What role does your chef or kitchen team play in developing new dishes and keeping the menu fresh?
Our kitchen team plays a central role in shaping the menu – their experience, creativity, and understanding of seasonality drive new ideas and refinements. We also encourage collaboration tasting, testing, and refining dishes before they reach the floor to ensure the menu evolves organically and is grounded in both culinary skill and real guest feedback.
Is there a dish that consistently surprises guests – either in popularity or presentation?
Our curries, they are so good! We have curry night every Tuesday and they area sensation. The quality, the assortment of flavours and varieties, and the simplicity of a brilliant evolving dish. We believe a good curry shouldn’t just be a warm, winter favourite – they should be eaten all year round.
