PAN & VINE

Within the rustic, vine-draped walls of Pan & Vine sits one of Kent Town’s most quietly confident eateries, known for thoughtfully made, produce-driven pizzas. Brothers Anthony and Luke have created an elevated yet relaxed space where stone-baked sourdough pizzas are best enjoyed with a glass of Montepulciano d’Abruzzo.

Pan & Vine has carved out a name for its beautifully simple, produce-driven pizzas. What defines your style of pizza and approach to flavour?

The Sourdough pizza bases are the foundation of everything we do. Beyond that, sourcing the highest quality ingredients to get the best representation of the menu onto the customer’s plate is a major pillar of our approach.

Kent Town has a mix of locals, workers and weekend visitors –how does this influence the vibe and menu at Pan & Vine?

The dual appeal of being a local favourite with regular customers, as well as providing a quality option to new visitors of the area is an exciting proposition. The biggest influence in this regard is consistency of product and service. It’s great recognition to see a customer return after a year between visits.

What ingredients or techniques are non-negotiables in your kitchen?

We use quality ingredients from trusted suppliers to make everything we feasibly can, in the small space we have. That has been a priority since day one.

Are there any new flavours, seasonal specials or developments coming that you can share?

Coming into summer, we have added some new specials to fit in with the season. We have crafted a fresh, light pizza, with a grated zucchini and parmesan base, topped with Stracciatella cheese and preserved lemon. On the sweeter side, we’re introducing a refreshing Aperol Slushyas well as a Strawberry Tiramisu. A previous crowd-favourite special of Spicy Vodka Rigatoni has also been added to the permanent menu.

BIBO BAR AND EATERY

Blending European elegance with a relaxed neighbourhood charm, Kent Town’s Bibo is the perfect spot to enjoy exceptional food with great company. From grab-and-go focaccia tuna melts to grilled octopus and authentic Italian pastas, the duo behind Bibo, Gaetano and Luca, cultivate a homely yet refined dining experience for locals and visitors alike.

Bibo has become known for its European-inspired dishes and warm, neighbourhood energy. How would you describe the Bibo experience in your own words?

Bibo is all about effortless hospitality. It’s a place where the food feels thoughtful but never fussy, and where you’re just as welcome popping in for a quick glass of wine as you are settling in for a long lunch or dinner with friends. The European influence is there in the flavours and simplicity of the dishes, but the heart of Bibo is very much neighbourhood-driven – familiar faces, relaxed energy and a space that feels easy, warm and lived-in.

Your menu champion’s seasonal produce. What dish are you currently most excited about?

Right now, we’re most excited about dishes that really let seasonal produce shine. The focus is on ingredients at their peak – bright colours, bold flavours and simple combinations that allow the produce to do the talking. It’s the kind of food that feels fresh and vibrant, and reflects what’s inspiring the kitchen in this moment.

There’s a real sense of community in Kent Town. How does Bibo connect with locals and regulars?

Kent Town has an incredible sense of community, and Bibo naturally became part of that through consistency and genuine connection. We know our regulars, we remember what they like to drink, and we love being a place people return to week after week. Whether it’s locals dropping in afterwork, families coming in on weekends or neighbours catching up over a meal, Bibo is very much a meeting place for the area.

What can diners look forward to over the coming months – any new menu additions, events or collaborations?

Over the coming months, diners can expect menus that continue to evolve with the seasons – fresh produce, vibrant colours and lots of bold, confident flavours. We’re excited to keep things dynamic and creative, while staying true to Bibo’s relaxed, European-inspired style. There will also be some thoughtful collaborations and moments that bring people together, all centred around good food, good wine and community.
