Tiger Prawn Huskies
Serves 4-6
Ingredients
– 1kg extra-large tiger prawns, whole
– 250g psyllium husks
– 2 eggs
– Salt
– Oil for frying
– Sriracha sauce
– 1 lemon, cut to wedges
Method
(1) Peel the prawns from the head to the last tail section, keeping the head and tail on the prawn. Cut deeply down the back, from head to tail, and remove the intestinal track. The deeper the cut, the better. Pat dry and put aside.
