Anchovy Bandit is a former Prospect hole-in-the-wall bar/pizzeria that has recently undergone a transformation with partner and Executive Chef Shane Wilson taking charge of the kitchen, while neighbouring Bottega Bandito is an exciting new addition to Prospect’s thriving thoroughfare, bringing old school service, modern Italian and banging coffee your way.
Each dish at Anchovy Bandit takes inspiration from classic Italian dishes but done Shane’s way, in-house and using seasonal produce. The space itself gives a nod to the Italian art deco era, with green leather booths and touches of oak. The open-style kitchen allows diners to witness the magic that goes on behind the scenes.
Shane is also behind the menu at Bottega Bandito, which is influenced by Italian and European daytime dining, serving up house-made pastries, small goods, coffee and sandwiches.
This is the first daytime concept by The Big Easy Group – the hospitality minds behind NOLA Adelaide, Anchovy Bandit and Yiasou George – and cleverly captures the essence of a traditional Italian espresso bar.
